*1/2 cup sugar.
*6 cups Crispix cereal. *10 ounces Mixed nuts. *10 ounces Pretzel
sticks. *3/4 cup Butter or margarine. *3/4 cup Packed brown sugar. Method:
In a large bowl,
combine the cereal, nuts and pretzels. In a small saucepan over low
heat, melt butter. Add brown sugar, cook and stir until dissolved. Pour
over cereal mixture stir to coat. Place a third on a greased 15x10x1"
baking pan. Bake at 325 degrees for 8 minutes stir & bake for 6
minutes more. Spread on waxed paper to cool. Repeat with remaining
mixture. Serving Size:14.
Recipe: Chili Burgers
(Mexican). Category: Snacks. Ingredients:
*1 1/2 cups water. *1 cup seven grain cereal. *10 ounces soft tofu,
blended. *2 tspns McKay's chicken-style seasoning. *1/4 cup fresh
cilantro chopped. *3 tspns canned chopped green chiles. *1 1/2 tspns
dried oregano. *1 tspn cumin. *1 teaspoon chilli powder. *2 tspns
garlic
powder. *1 cup onion chopped fine. *1/2 cup shredded carrots. *2 cups
cooked brown rice. *1/2 cup to 1 cup cracker crumbs. *1 cup plum
tomatoes seeded & chopped. *cooking spray. Method:
In a small microwaveable bowl, combine 1 1/2 cups water wit the
seven-grain cereal. Cover & microwave on high for 5 minutes. Grains
should be softened. Let sit to cool while preparing the remaining
ingredients. In a blender container, blend the soft tofu to the
consistency of cottage cheese. If tofu is too thick, add a small amount
of water. In a large mixing bowl, pour blended tofu or beaten eggs
& add McKay's chicken-style seasoning, cilantro, green chiles,
oregano, cumin, chilli powder & garlic powder. Mix well. Add the
onions, carrots, rice, cracker crumbs, tomatoes & softened grain
mixture. Mix well. If mixture is too thin to form burgers, add
additional cracker crumbs. If mixture is too crumbly, add a few
tablespoons of water to hold mixture together. Shape into 12 patties
that are 4 inches in diameter & about 1/2 inch thick. Spray a
non-stick skillet with cooking spray and place over medium heat. Add
patties & sauté for about 5 minutes per side or until golden
brown.

Recipe: Banana Chips
(Indian). Category: Snacks.
Ingredients:
*6 large Nendran banana. *2 cups Oil. *2 tbsp Salt. Method:
With a sharp knife make slits along the skin of the banana. Gently
remove the peel. Completely leaving only the pinkish flesh inside.
Slice the inside portion with a grater on to a newspaper. In a large
frying pan, heat oil (usually coconut oil is used). When hot add the
sliced pieces & fry them till crisp. As it gets cooked it will
become yellow. Sprinkle salt water before removing from oil. Drain
& remove. The colour yellow is natural.

Guacamole (Mexican). Category: Snacks. Ingredients:
*1 ripe avocado, peeled. *1 roma tomato. *2 Tbsp. olive oil. *1 1/2
Tbsp. chilli oil. *salt to taste. Method:
Chop avocado & tomato into medium sized pieces and place in food
processor. Blend for 30 seconds. Then pour in olive oil and chilli oil
while motor is still running. Then when you've reached your desired
consistency season with salt & serve on a veggie sandwich.
Recipe: Wonton Chips. Category: Snacks. Ingredients:
*8 fresh wonton wraps. *salt (optional). Method:
Preheat oven to 350F. Cut the wonton wraps into triangles & place
in a single layer on a baking sheet. Sprinkle with salt. Bake for 5-7
minutes or until wontons begin to brown.
Recipe: White Russian
Casserole. Category: Snacks. Ingredients:
*10 Maine potatoes. *2 lg onions, sliced. *2 c chopped cabbage. *2 c
chopped cauliflower. *1 lg can white kidney beans. *8 c garlic,
crushed. *1/4 c chopped dill. *2 T light cream cheese. *4 T plain
yogurt. *1/4 c plain soymilk (or just use more yogurt). *4 slices
fakin' bakin (a soy-based bacon substitute). *2 T sesame seeds. *canola
oil. *paprika, salt & pepper. Method:
Boil or microwave the potatoes till nearly done. When cool enough,
remove the skins Fry the sliced onions in a little oil till soft Add
the chopped cabbage, the chopped cauliflower & 6 cloves of the
crushed garlic, and fry till the cabbage and cauliflower are just
tender. Melt the cream crease & add to it the soymilk, yogurt &
dill. Mix together & add to the vegetable mixture. Drain &
rinse the white beans & add to the vegetable mixture. mix
thoroughly & add salt & pepper to taste. Slice the potatoes
into rounds & put half the slices on the bottom of an oiled baking
dish. Fill with the mixture. Fry or microwave the faking' baking Cover
with the remaining potatoes Mix the remaining 2 cloves of crushed
garlic with a little bit of oil & spread over the potatoes.
Sprinkle
with paprika. Bake at 325 for about 20 minutes. Sprinkle with the
sesame seeds Bake a few minutes more. Serve hot.
Recipe: Smashed Beans
(Mexican). Category: Snacks. Ingredients:
*2 cups pinto beans. *8 cups water. *1/2 tspn onion powder. *1/2 tspn
garlic powder. *1/2 to 1 cup salsa (mild to spicy, your preference). Method:
Soak beans overnight, drain and rinse. place beans in the water. Bring
to a boil, cover, reduce heat & simmer for 3-4 hours. Drain
reserving the cooking liquid. Mash the beans using a hand masher,
beater, or food processor. Return to pan. Add the spices, a little of
the reserved liquid & the salsa, stirring until the beans have a
softened, smashed consistency. Heat through to blend flavours.
Recipe: Chickpeas
Snacks (Indian). Category: Snacks. Ingredients:
*250 gr of chickpeas (1 cup). *2 Tbsp vegetable oil. *1 onion chopped.
*2 cm cinnamon stick. *4 cloves. *2 garlic cloves, squashed. *2 cm
fresh ginger, chopped. *1 green chili pepper, finely chopped. *2 tsp
ground coriander *3/4 cup of chopped tomatoes (from a can). *1 tsp
garam massala. *1 Tbsp cilantro, chopped. Method:
Soak chickpeas overnight, rinse, cook in water until tender, Drain
(keep the cooking liquid) In a frying pan heat the oil, fry onion until
golden. Add cinnamon & cloves, cook a few seconds. Add garlic,
ginger, chili pepper, ground coriander & cook 5 minutes, stirring.
Add tomatoes, with the juice and cook until all liquid has evaporated.
Add the chickpeas to the pan, mix well, cook 5 minutes. Pour the
cooking liquid of the chickpeas and simmer for 25 minutes, until all
the liquid is gone. Sprinkle with the garam massala and cilantro. Can
be served hot of cold.
Recipe: Cheesy Popcorn
(Low-cal). Category: Snacks. Ingredients:
*1/4 c Uncooked popcorn kernels. *1 tb Corn oil. *1 pk Butter Buds Mix,
dry. *1 t Basil leaves. *1/2 ts Oregano leaves. *1/4 c Grated Parmesan
cheese. *1/8 ts Black pepper. Method:
To prepare popcorn, place oil & un-popped corn kernels in popcorn
popper. Cover & pop according to manufacturer's directions. Remove
popped corn from heat. If using a heavy saucepan or skillet, heat,
covered, over medium heat. Shake while corn is popping. If using
hot-air popcorn popper, spray popped corn lightly with non-stick
cooking spray. Combine warm popcorn with the remaining ingredients in
large bowl; toss to mix. Makes four 1-cup servings. Serving:4.
Recipe: Chilli Peanuts. Category: Snacks. Ingredients:
*Peanuts. *Chilli powder. *Paprika. *1 ds Red pepper. Method:
To each cup of raw peanuts, add small amount of chilli powder, about
1/4
teaspoon, a smaller amount of paprika & a dash of red pepper. Stir
gently & increase chilli powder to taste as the peanuts warm.
Spread
out on a cookie sheet & bake in 300'F. oven until heated. Serve:8.
Recipe: Cinnamon Apple
Fruit Stix. Category: Snacks. Ingredients:
*24 oz Jar MOTTS Cinnamon Apple. *Sauce. *2 ts Cinnamon. *1/2 ts Food
colouring (if desired). Method:
Heat oven to 250. Line jelly roll pan with plastic wrap, securing ends
with tape. In medium bowl, combine all ingredients. Pour into prepared
pan; spread evenly. Bake at 250 for 1 1/4 hours. Turn off oven. Let
stand in oven 2-3 hours until dry. Cut into 8 squares carefully remove
plastic wrap. Roll up jelly roll fashion. 8 snacks. TIP: For ease in
spreading, place another piece of plastic wrap on top of apple sauce
mixture; spread evenly with knife. Remove top piece of plastic wrap
before baking. Serve:6.
Recipe: Oatmeal Butter
Crackers Recipe (With Breads). Category: Snacks. Ingredients:
*1 1/2 c All-purpose flour. *1 1/2 c Rolled oats (oatmeal). *1/2 ts
Salt. *1 tb Sugar. *6 tb (3/4 stick) butter/Margarine (melted and
Cooled). *1/2 c Milk. Method:
Preheat the oven to 325~ F. 20-25 minutes. Stir together the flour,
oats, salt, and sugar in a large bowl or in the food processor. Cut in
the butter until the mixture resembles coarse meal. Blend in enough of
the milk to form a dough that will hold together in a cohesive ball.
Divide the dough into 2 equal portions for rolling. On a floured
surface
or pastry cloth, roll as thin as possible, to about 1/16 inch thick.
Using a spatula, rolling pin, or your hands, transfer the rolled dough
gently onto a large baking sheet. With a sharp knife, score the dough
into 2-inch squares without cutting all the way through the dough.
Prick
each square 2-3 times with the tines of a fork. Bake for 20-25 minutes,
turning over after 15 minutes, until crisp. Cool on a rack. Break into
individual crackers when cool. serve whopping 50.
Recipe: Corn Crisps
(Vegan). Category: Snacks. Ingredients:
*5 tb Butter. *1/2 c White cornmeal. *1/2 c All-purpose flour. *1/4 ts
Salt. *1 1/2 ts Sugar. *1 1/2 ts Baking powder. *1 Egg. *3/4 c Milk. Method:
Melt the butter and lightly brush it over 2 sheets of parchment paper.
Line 2 baking sheets with the paper, buttered side up. Set remaining
butter aside. Adjust oven racks to middle position & heat oven to
425F. Sift the cornmeal with the flour, salt, sugar & baking powder
into a large bowl. Beat egg lightly with milk & stir into dry
ingredients until batter is lump-free. Stir in 2 1/2 tablespoons melted
butter. Bake until browned, 10-12 minutes. Brush crisps with the
remaining butter & cool on wire rack. (Can store for 1 week in
airtight container.). Servings:20.
Recipe: Easy Soft
Pretzels (Vegan). Category: Snacks. Ingredients:
*10 oz Package refrigerated pizza dough. *1 Egg beaten. *1 tbsp Water
*Poppy seed. *Sesame seed. *Course salt. *Garlic (or onion salt). Method:
Unroll pizza dough onto an 18-inch piece of lightly floured waxed
paper. Roll dough into a 16 by 10 inch rectangle. Cut dough lengthwise
into 10 1 inch-wide strips. Shape each strip of dough into a circle,
overlapping about 4 inches from each end & leaving ends free.
Taking one end of the dough in each hand, twist at the point where the
dough overlaps. Carefully lift each end across to the edge of the
circle opposite it. Tuck ends under to seal. Place pretzels 1 inch
apart on an ungreased baking sheet. Stir together egg & water.
Brush pretzels with egg mixture. Sprinkle with sesame seed, poppy seed,
coarse salt, garlic salt or onion salt. Bake in a 350 degree oven for
15-17 minutes or until golden. Serve hot.Serve:6.
Recipe: Crunchy Munchy
Pizza Snack. Category: Snacks. Ingredients:
*1 sm Pita bread. *1 tb Butter, softened. *1/8 ts Garlic powder. *1/2
ts Oregano leaves. *1 tb Grated Parmesan cheese Paprika. Method:
Place a sheet of wax paper on a micro-safe plate. Cut pita bread in
half to form 2 thin circles. Place on wax paper. Spread butter on the
rough side of each circle. Sprinkle each circle with half of the garlic
powder, oregano & cheese. Sprinkle each circle with paprika. With
scissors or knife, cut each circle into 4 triangles. Arrange triangles
to form a circle around the edge of the plate. Micro on high, 1 min.
Turn plate halfway around. Micro on high, 1 min. more. If pita
triangles are still not crisp, micro on high 10-30 seconds more.Serve:2.
Recipe: Milk Chocolate
Popcorn Recipe. Category: Snacks. Ingredients:
*12 c Popped popcorn. *12 oz Salted peanuts. *1 c Corn syrup. *1/4 c
Butter or margarine. *12 oz Milk chocolate chips. Method:
In a large, greased, roasting pan, combine popcorn and nuts. In a
large, heavy saucepan combine chocolate chips, corn syrup & butter.
Cook over medium heat until mixture boils, stirring constantly. pour
over popcorn toss well to coat. Bake in a preheated ~300 oven for 45
minutes stirring frequently. Cool completely. Store in an airtight
container for up to two weeks. Makes about 14 cups.Serve:1.
Recipe: Mushroom
Popcorn Recipe. Category: Snacks. Ingredients:
*1/2 cup Butter. *1 tablespoon Dried onion flakes. *1 tablespoon Dried
bell pepper flakes. *Several dried mushrooms (cut small). *1/2 cup
Popcorn (popped). *Salt. Method:
In a heavy saucepan melt the butter. Add the onion flakes, bell pepper
flakes & dried mushrooms. Stir over moderate heat for a few
minutes. Pour over the popped corn. Add salt.
Recipe: Onion Cookies. Category: Snacks. Ingredients:
*3 lg Onions. *1 c Oil. *1 tb Salt. *1 t Soda. *1/4 c Water. *2 Eggs.
*4 c Flour. *2 tb Poppy seeds. Method:
Cut onions very thin. Add all other ingredients. Roll very thin on
floured board. Cut into rounds or squares. Bake in 400 degree oven 10
to 15 minutes until golden brown. Yield: 3 dozen.
Recipe: Noodle Nibbles
Recipe. Category: Snacks. Ingredients:
*3 tb Utter melted. *2 ts Soy sauce. *4 ds Tabasco sauce. *3 oz Can
chow mein noodles. *1/4 ts Celery salt. *1 d Onion powder. Method:
Combine melted butter, soy sauce and Tabasco; drizzle over noodles.
Toss lightly till noodles are well-coated. Sprinkle noodles with celery
salt & onion powder. Again, toss until well mixed. Place on a
baking sheet & toast at 275 for 12-15 minutes or until lightly
browned & crispy. Makes about 2 1/2 cups.

*4 c Rice or Corn Chex cereal. *1 1/2 c Miniature pretzels. *1 c Pecan
halves. *1/3 c Butter or margarine. *1/4 c Honey. Method:
In a large mixing bowl, combine cereal, pretzels and pecans; set aside.
Melt butter in a small saucepan; stir in honey & blend well. Pour
over cereal mixture and stir to coat evenly. Spread in a jelly roll
pan. Bake at 350! for 1215 minutes or until mixture is lightly glazed,
stirring occasionally. Remove from oven & cool slightly. Spread on
waxed paper to cool completely. Yield: about 6-1/2 cups.Serve:1.
